Soba noodles & salmon

conocía los soba noodles (tallarines elaborados con trigo sarraceno, muy comunes en la cocina japonesa); lo que no conocía -y tenía hacía un tiempo en mi casa, para experimentar- eran unos fideos de origen taiwanés, de té verde, así que recordando los sabores aprehendidos, puse manos a la obra.

una imagen, un pensamiento, va unido a otro, indudablemente.

el uso de semillas de sésamo y el aceite para mi última experiencia en la elaboración de unas galletas, como materia prima nuclear en la esencia del producto, me lleva a la elaboración de este otro plato.

hiervo la pasta, la pruebo (sabrosa, por cierto); la mezclo con un poco de aceite vegetal y aceite de sésamo (para darle sentido de pertenencia a su esencia; para colocarla en su lugar justo… maravilloso sabor).

porciono un trozo de salmón al que agrego sal, pimienta blanca y semillas de apio molidas; lo sello a fuego medio-fuerte (con su piel, para que luzca más atractivo, con ese color metálico cobrizo); lo baño con una salsa de soja glasé y los presento en el plato: pescado y pasta; para que se acoplen, con un poco de salsa a su lado, para que el comensal vaya agregando a medida que se sumerge en el sueño de la interpretación de los sabores.

así de simple,… así de mágico.

I knew the soba noodles (noodles made with buckwheat, very common in Japanese cuisine); what I did not know -and I had some time in my house, to experiment- were green tea noodles, of Taiwanese origin, so remembering the flavors I learned, I set to work.

an image, a thought, is bound to another, undoubtedly.

the use of sesame seeds and oil for my last experience in the preparation of cookies, as a nuclear raw material in the essence of the product, leads me to the elaboration of this other dish.

I boil the pasta, I taste it (tasty, by the way); I mix it with a little vegetable oil and sesame oil (to give it a sense of belonging to its essence, to put it in its right place ... wonderful flavor).

I give a piece of salmon to which I add salt, white pepper and ground celery seeds; I seal it with medium-strong fire (with its skin, so it looks more attractive, with that coppery metallic color); I bathe it with a glaze soy sauce and I introduce it on the plate: fish and pasta; so that they fit together, with a little sauce next to them, so that the guest will add as he immerses himself in the dream of the interpretation of the flavors.

So simple, ... so magical.
