Lentejas guisadas

 

 

 

En un principio fueron las ganas de volver a comer lentejas,… en un guiso;

que tanto me gustan y que junto a tantas otras cosas, me traen a la memoria la batería de recursos a los que se recurría para combatir los interminables inviernos; aquellos de piernas entumecidas con pantalones cortos y pullóveres que traslucían historias de urdimbres que mis extendidos brazos tantas veces habían servido para ovillar aquellas pelotas de lana que se iban consumiendo desde el núcleo hacia afuera y que terminaban en el encadenado de las agujas que mi madre manejaba con aquella solvencia que tenía algo de motor (nunca voy a dejar de maravillarme de la manera en que continuaba la confección de la pieza conversando y mirando en otra dirección que no fuera la del propio tejido).

 

Era casi un juego sentarse a la mesa para separar impurezas, primero, para dejarlas sumergidas en agua toda la noche, luego de lo cual se ponían a hervir a fuego lento hasta tiernizarlas.

 

Carne, chorizo, cebolla, zanahorias, tomates (en cubos y pasta), laurel, oregano, papas y boniatos (en cubos, también), para la base de la receta, que terminaría recibiendo las protagonistas del plato. 

 

Al día siguiente estaba más sabroso, porque los sabores se asentaban y el líquido adquiría más consistencia.

 

Recurriendo a las temperaturas bajas por estas latitudes, me conecto con el pasado tan pasado  -en este caso- a través del guiso de lentejas, para tratar de llegar a lo de siempre: las conexiones que me ayudan a encontrar el sentido de mi vida.

 

En este caso, traté de recrear la receta, pero no desde su núcleo, sino colocándola en un boniato glaseado, al que ahuequé y le coloqué el guisado y lo acompañé con una esferas de puré (de lo que se extrajo del boniato), hecho con crema de leche, jengibre y miel de maple, y unos hongos (de la variedad sheetake) salteados.

 

Para la decoración, se me ocurrió cubrirlo con unos hilos finos de caramelo y en el proceso de la misma, me vino a la memoria, por su aspecto, el cuento de Gulliver, así que terminé bautizando el plato, con su nombre.

Lentils stew

 

At first, it was the desire to eat lentils again, ... in a stew; that I like so much and that, along with so many other things, remind me of the battery of resources that were used to combat the endless winters; Those of numb legs with shorts and pullovers that tell  stories of warps that my outstretched arms so many times served to wind those balls of wool that were consumed from the core out and ended in the chain of the needles that my mother handled with that Solvency that had some engine (I will never stop wondering about the way in which the piece continued to be made, talking and looking in a different direction than the fabric itself).

It was almost a game to sit at the table to separate impurities, first, to leave them submerged in water all night, after which they were put to boil over fire until they were tender.

Meat, chorizo, onion, carrots, tomatoes (in cubes and pasta), laurel, oregano, potatoes and sweet potatoes (cubed, too), for the base of the recipe, which ends up receiving the protagonists of the dish.

The next day was more tasty, because the flavors settled and the liquid became more consistent.

Resorting to the low temperatures in these latitudes, I connect with the past so past - in this case - through the lentil stew to try to get to the always: the connections that help me find the meaning of my life.

In this case, try to recreate the recipe, but not from its core, but placing it in a glazed sweet potato, which hollowed out and put the stew and accompany it with spheres of pure (of what was extracted from the sweet potato), made with cream of milk, ginger and honey of maple, and  sautéed mushrooms (of the variety sheetake).

For the decoration, it occurred to me to cover it with some fine threads of caramel and, in the process of it, I came to the memory, because of its appearance, the story of Gulliver, so I ended up baptizing the dish with his name.
