Patê al Cognac en Sarcófago de Hojaldre

principio y fin en lo curricular de la carrera gastronómica…

 

en otro momento he comentado 

del impacto que tuvo en mi vida el pasaje por la escuela de gastronomía donde me he formado: 

Le Cordon Bleu…

 

y de la sorpresa, a medida que me iba sumergiendo en los procedimientos, recetas, métodos de cocción, etc.; 

en una palabra: en el proceso que va desde el núcleo mismo de la elaboración del alimento, 

hasta la desembocadura del mismo,…

 

de lo cercano, de lo íntimamente vinculado con el acto creativo en las artes visuales…

 

hice también referencia, quizás en el mismo relato, 

de la prueba última que tuvimos que realizar los estudiantes antes de graduarnos, 

 

donde debíamos presentar 2 recetas con un pollo previamente troceado (cuyas partes debían ser examinadas antes de pasar a la elaboración de las mismas)…

 

ensayé con mucho entusiasmo y cronometrando el tiempo que me restaba, 

para la preparación de mis platos:

 

un entrante: patê de pollo al Cognac sobre un croute de pan… y

 

un plato principal: pechuga de pollo rostizada con vegetales…

 

el centro de mi atención era el patê de pollo, porque me parecía la forma más atractiva (y aún me sigue pareciendo) de transformar esta proteína en una estructura totalmente diferente… 

 

 

con el tiempo, fui sustituyendo la tostada que servía de soporte al patê de pollo, 

con un hojaldre que lo contenía… 

 

y le puse de nombre al plato

y aquí es donde conecto el principio y el fin de mi pasaje por la escuela de gastronomía:

 

uno de los primeros trabajos de ensayo que tuve que realizar, al comenzar la carrera,  era acerca del impacto que un libro o una película relativa al tema gastronómico, había hecho en mi vida,…

 

no lo tuve que pensar mucho, porque enseguida vino a mi memoria El Festín de Babette y el momento de transformación que logra en los comensales a la hora de servirle los platos elaborados…

 

a medida que los iba sirviendo, la cámara mostraba sus facciones, 

y de qué manera se iban suavizando a medida que ingerían el alimento…

 

en determinado momento, sirve una receta de Perdices en Sarcófago, que me impresionó muchísimo…

 

 

en homenaje a esta  bellísima película y al poder de transformación que puede tener el acto creativo en el espectador, establezco mi intención con el más profundo deseo, que mi trabajo pueda conectar, 

 

en el lenguaje creativo que sea,…

con el espectador…

 

 

y así, de esa manera,…

 

darle sentido a mi propia búsqueda…

 

porque de qué otra manera puedo llegar a entender,…

 

y a veces a duras penas,…

 

ese chispazo que conecta al acto creativo con el destinatario receptor del mismo, el propio espectador,

 

sin la existencia de ese otro polo que pueda complementar la razón del mismo?

 

puedo tener la materia prima,

la idea para elaborarla,

el más alto gesto de sublimación de la misma…

y presentarla

 

con los fuegos artificiales que el oficio me ha conferido

 

pero, 

 

sin recepción, 

 

soy apenas nada…

 

y caigo en la cuenta que tengo que apelar

 

a mi propia oficina de prensa

para recurrir a los altavoces y panfletos

de los oropeles que mi trabajo promete…

 

y eso, por otro lado, me molesta…

 

me coloca en una ambigüedad

que me tironea de un lado y del otro,

a veces haciéndome sentir casi un hipócrita…

 

que no soy merecedor de caminar

el sendero que he elegido seguir…

 

porque me distraigo en querer escuchar

cantos de sirenas…

 

que me prometen laureles 

que las cicatrices testifican  son falsos…

 

y al final, 

la duda sigue allí,…

 

quizás como rectora y mentora de mi búsqueda,

como encargada de hacerme aterrizar

en el momento justo que el ego me despega,

para sacudirme los  delirios de grandeza…

 

y ya purificado, libre de ensoñaciones,

volver a retornar  la esencia de mis creaciones,

el placer de mi quehacer…

el regodeo de mi búsqueda permanente…

sin distracciones

 

así de complejo,

se presenta este dilema…

where we had to present 2 recipes with a previously chopped chicken (whose parts had to be examined before proceeding to the elaboration of them) ...

 

I rehearsed with great enthusiasm and timing the time I had left,

for the preparation of my dishes:

 

a starter: Cognac chicken patê on a bread crout ... and

 

a main dish: roasted chicken breast with vegetables ...

 

The center of my attention was the chicken patê, because it seemed to me the most attractive way (and it still seems to me) to transform this protein into a totally different structure ...

 

 

As time went by, I was replacing the toast that served as a support for the chicken patê,

with a puff pastry that contained it ...

 

and I named the plate

and this is where I connect the beginning and the end of my passage through the gastronomy school:

 

One of the first essays that I had to do, at the beginning of my degree, was about the impact that a book or film related to gastronomy had made in my life, ...

 

I didn't have to think about it much, because Babette's Feast immediately came to my mind and the moment of transformation it achieves in the diners when serving the elaborate dishes ...

 

as he served them, the camera showed his features,

and in what way they softened as they ate the food ...

 

at a certain point, he served a recipe for Partridges in Sarcófago, which impressed me a lot ...

In homage to this beautiful film and the power of transformation that the creative act can have on the viewer, I establish my intention with the deepest desire that my work can connect,

 

in whatever creative language, ...

with the viewer ...

 

 

and so, in that way, ...

 

make sense of my own search ...

 

because how else can I come to understand, ...

 

and sometimes with great difficulty, ...

 

that spark that connects the creative act with its recipient, the spectator himself,

 

without the existence of that other pole that can complement the reason for it?

 

I can have the raw material,

the idea to elaborate it,

the highest gesture of sublimation of it ...

and show it

 

with the fireworks that the office has conferred on me

 

but,

 

without any reception,

 

I'm just nothing ...

 

and I realize that I have to appeal

 

to my own press office

to draw on speakers and pamphlets

of the tinsel that my work promises ...

 

and that, on the other hand, bothers me ...

 

puts me in an ambiguity

that pulls me from one side to the other,

sometimes making me feel almost a hypocrite ...

 

that I am not worthy of walking

the path that I have chosen to follow ...

 

because I am distracted by wanting to listen

songs of sirens ...

 

that promise me laurels

that the scars testify are false ...

 

At the end,

the doubt is still there, ...

 

perhaps as rector and mentor of my search,

as in charge of making me land

at the right moment that the ego takes me off,

to rip my delusions of grandeur ...

 

and already purified, free from daydreams,

return to return the essence of my creations,

the pleasure of my work ...

the delight of my permanent search ...

No distractions

 

so complex,

this dilemma presents itself ...
